Our friend Jennifer brings this yummy treat over on special occasions. This one was a present for Wendy’s birthday. Wendy goes crazy over this stuff. It’s like popcorn mixed with I think a marshmallow cream and peanut M&M’s. I think it’s the “salty-sweet” that appeals to her. I’m quite fond of the stuff too but Jennifer knows the key to my heart lies somewhere between Red Velvet cake and Snicker-doodles!

Hi to all!
Mike has requested that I give the recipe for the popcorn cake. I can not take credit for it. My Mom watched Emeril’s cooking show and got this simple recipe. We just added the peanuts and the M&M’s to it. So, here it is.
1 stick of butter
1 to 1 1/2 bags of microwave popcorn
1 bag of mini marshmellows
1 bag of M&M’s
*option: peanuts
1 bunt cake pan
Pop the popcorn. Pour popcorn into big bowl. You will need plenty of room to mix. Butter bunt cake pan on sides and bottom well. Set these aside.
In medium mixing bowl, put 1 stick of butter and 1 bag of marshmellows. Melt on medium heat. When completly melted, pour over popcorn. Work fast. Mix the popcorn into the melted mix. After well coated add peanuts and M&M’s. Place in bunt cake and press popcorn mixture down. Do not pack firmly. Cool. Place on plate to serve. Will make 6 to 8 servings.
Special note: Experiment with this recipe. It is easy and very filling. Great for kids.
Thank you Jennifer I cant wait to try it!!! And can you picture it with green food coloring at Christmas time like a wreath for gift giving?? We are already thinking of cool ideas…Thanks again, Stephanie
